Gluten Free Christmas Gifts

The lead up to Christmas got very busy but surprisingly (and somewhat spookily) I was ready a day early!

We had invited some friends to pop in to see us on Christmas Eve - an open home of sorts and we had a great day, very busy with lots of people popping in.  It was lovely to catch up with some friends who we haven't seen since coming back to New Zealand (shame on us).

I thought I'd share this little photo with you - I sent these off to friends who live a gluten free lifestyle.  

Here's how I made them.  I took some 800gm fruit tins (not the really big ones the middle sized ones) and cut them off to about half their height.  Then filed them off so that they weren't so sharp.  After a spin in the dishwasher to make sure that all the little shavings were well and truly gone, I lined them with parchment paper.  I used my Christmas Cake recipe and just divided it up.  This recipe will make six of these cakes but I hadn't prepared six tins so I made another larger cake as well.  

I have just cut into my Christmas Cake and it is really good.  I think this one gets better with age, like most Christmas Cakes.

As well as the cakes I also made shortbread and spice cookies.
