Corn Fritter Recipe

Corn fritters are one of my most favourite foods!  They are super quick to make and so delicious. You can literally make them as your guests are arriving and they will be divine. If you serve them with a little dish of tomato sauce (ketchup) for dipping, it makes them very special.  

I love to serve them as finger food at parties.  I make tiny wee ones and pop them on a plate around the sauce.  This works so well.  Actually, I love to serve lots of things this way but that’s another story.

Ingredients

There’s not much to these corn fritters – may be that’s why I like to make them so much.  

There’s just four (or five for gluten free) ingredients.

One 440g can of whole kernel corn makes a whole batch. Make sure you reserve the liquid with you drain the corn - you’ll need it later.

Below I have given separate recipes for standard and gluten free corn fritters.

Gluten Free Corn Fritters

Ingredients:

  • 440g can Whole Kernel Corn
  • 1 Egg
  • 1 Cup Gluten Free Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Guar Gum
  • Olive Oil for frying

Method:

Drain the corn and reserve the liquid.

Put the corn in a bowl and mix in ¼ cup of the liquid and the egg.  Mix well with a fork.

Add the dry ingredients and mix well.  You may need to add a little more of the liquid. You are aim for a fairly thick mixture but not dry, as shown in the video.  Be aware that if you add too much liquid the cooked fritters could be a little rubbery.

Heat about 1cm of olive oil in a frypan. Add spoonfuls of the mixture and cook until golden on one side and the bubbles start to pop around the edges.  Turn the fritters over and cook until golden and cooked through.  Drain on a paper towel.

Corn Fritters
