Irish Soda Bread Recipe

I first made this recipe about 30 years ago. It's a wonderful alternative to a yeast bread and super easy to make.

While I love making my fluffy white bread recipe, sometimes you just don't have time to work through the process - shaping, rising, punching down - shaping again.

So this bread recipe cuts out all of the rising time and is ready in just an hour.

Ingredients:

  • 1 3/4 cups buttermilk
  • 2 teaspoons baking soda
  • 2 teaspoons cream of tartar
  • 50 grams butter
  • 2 cups plain flour
  • 1 1/2 cups wholemeal flour
  • 1/2 teaspoon salt
  • 1/4 cup extra flour

Hint: If you don't have buttermilk, use the same quantity of milk and add a squeeze of lemon juice. Let it stand for 10 minutes before using.

Method:

  1. Sift the flour baking soda, cream of tartar and salt into a bowl.
  2. Make a well in the centre.
  3. Using a knife, add sufficient buttermilk to mix a soft dough.
  4. Sprinkle the half the extra flour onto a board and turn the dough out.
  5. Knead very lightly (not like a normal loaf, just a light touch).
  6. Mould the bread into approximately an 18cm round shape and place on a greased and floured baking sheet.
  7. Make a cross in the centre with a sharp knife and dust with some extra flour.
  8. Cover the bread with a 20cm round cake pan.
  9. Bake at 200 degrees celsius for 40-45 minutes.
  10. Remove the cake pan and bake for another 15 minutes.
  11. Tap the underneath side of the bread - if it sounds hollow, it's ready.
  12. Cool on a rack.

Serve fresh or toast when 1-2 days old.
