Keto Crunch Cereal Recipe

For me, Keto breakfasts are the hardest.  I often don’t have breakfast because I am fasting but when I do, it’s almost always a protein shake.  If you’re like me, you get bored with having the same thing every day.

With that in mind, I decided that it was high time I created a cereal that we could all enjoy and wasn’t too arduous to make. So Keto Crunch Cereal was born!

Please note that this recipe is really only a guide – if you don’t have something leave it out and if you have extra ingredients you want to add, then add them. I’ve made lots of versions and, to be honest, every time I make this recipe it is different.

Let’s talk about the ingredients:

Coconut Chips

I love adding coconut chips to this recipe but, if you look closely at the pictures in this post, you will see that there is none included here – that’s because I replaced them with shredded coconut, simply because I didn’t have any. Coconut chips add extra crunch to the recipe but they do burn quite quickly so when you toast it, you’ll need to watch carefully to ensure they don’t burn.

Toasted Hazelnuts

For better flavour and texture, I pre-toast my hazelnuts.  What I mean by this is that I put them on a tray in the oven for about 10 minutes, moving them around often so they don’t burn. Then I take them out, let them cool and chop them. Ido not worry about removing their skins. You can if you want and I used to, but I just don’t have the time to do this.

Seeds

There are a lot of seeds in this recipe.  Seeds are incredibly good for your digestion.  Don’t overdo the flaxseeds however or they might upset your tummy. I don’t bother to pre-toast my seeds, I just throw them in.

Cashews

I didn’t add cashews to my cereal this time because I didn’t have any.  They also add to the carb count.  What I did, however, was add some whole almonds as well as the sliced nuts.  I like the texture and crunch that the hole nuts give to this cereal.

This cereal is extremely filling so I have worked out the nutritional facts on eating only one third of a cup.  That certainly satisfies me.  I eat mine with yoghurt and some berries, or you could add cream instead.

Toasting

Spread the mixture evenly on a tray and place under the grill.  Watch it carefully, turning it every few minutes to ensure that it doesn’t burn.  Remember, if you are using coconut chips, they can burn quite quickly so don’t walk away and leave it.

Keto Crunch Cereal Ingredients List

Use this list as a guide and feel free to alter the amounts and ingredients as you wish, however, remember that adding ingredients will change the nutritional facts.

  • 2 cups almond meal
  • 2 cups coconut chips or shredded coconut
  • 1 cup sliced almonds
  • 1 cup toasted hazelnuts
  • ½ cup pumpkin seeds
  • ½ cup sesame seeds
  • ½ cup sunflower seeds
  • 2 tablespoons flaxseeds
  • ¼ cup xylitol
  • 1 tablespoon cinnamon
  • 1 cup cashews (optional)

Method:

  1. Pre-toast the hazelnuts as described below.
  2. Mix all the other ingredients in a large bowl.
  3. Place on a large tray (with sides) and put under the grill. Stir frequently to ensure that the mixture doesn’t burn.
  4. Once the mixture is nice and toasted, remove and allow to cool before putting into a container.
