Gluten Free Louise Cake

This recipe is just like the traditional Louise Cake - crumbly and sweet and ever so tempting. I must admit that I used a little more jam than I have put here, simply because I love jam - I also warmed it in the microwave slightly so that I could spread it evenly.

Lemon Shorties (Gluten Free)

This recipe came from my friend Ruth. It's a nice, quick, easy recipe that you can whisk up in a moment (well 20 minutes anyway).

Vegetable Korma (wheat and dairy free)

This has quickly become one of our very favourite meals. Even Jesse, a confirmed meat eater, gets excited when he sees it on the menu.

Chicken Noodle and Vege Soup (Gluten Free optional)

There's nothing quite like a hot, thick soup to warm you on cold winter days. This one has become a new favourite.

Gluten Free English Muffins

This is one of my favourite all time gluten free recipes for several reasons - first I love English Muffins and second - the dough is just like ordinary non-gluten free dough, meaning you can knead it.

Gluten Free Marshmallow Shortcake

I usually make this with a red jelly (boysenberry, raspberry or blackberry) but lime jelly was all I had so it became St Patrick's Day Marshmallow Shortcake.

Five Spice Crispy Chicken (Gluten Free)

This chicken is my best chicken recipe. It's yummy and crispy and if you miss the taste of KFC (not that I do personally) this could be a good replacement.

Gluten Free Lemon Cupcakes

This is the one everyone's been waiting for ... Lemon Cupcakes with Chocolate Icing. This is an all-in-one recipe which means everything goes in together at the same time - it's easy! These cupcakes are fantastic the day you make them but as with most gluten free baking, they get stale quite quickly so I usually ice them and then put them directly into the freezer.

Gluten Free Steamed Carrot Pudding

When I think of steamed pudding I think of cold winter days or Christmas and lots of heavy fruit. This steamed pudding is much lighter than a traditional steamed pudding and incredibly yummy.

Mum's Chocolate Cake Gluten Free Version

This recipe is a gluten free adaptation of the chocolate cake my mother made when I was a child. I have seen her make it in a roasting dish, quadrupling the recipe and it disappear in less time than it took to make. It's great because it's egg free and can be made dairy free as well.

Gluten Free Bread

This recipe is for a basic loaf of bread. It can be used for sandwiches but it's best eaten the day you make it. For some reason, this bread was way better made in New Zealand than in Canada - it could be the difference in altitude, it could be that the ingredients are slightly different - who knows. Anyway, if you make it, I'd love to hear how it turns out for you.
